"Happy Liver" Salad
 

Combine some or all of these ingredients for a nutrients-rich feast. Arugula, for instance, contains indoles that deactivate cancer-causing agents. Also dandelions, arugula’s, or radicchio’s bitter flavor is very supportive for the digestive system and liver function. Saponins in asparagus, lycopene in tomatoes, and sulfuring in broccoli sprouts also fight cancer. Walnuts and flaxseed oil are packed with heart disease-fighting omega-3 fats and ellegic acid. And seaweed is one of the best sources of hormone-supportive lignans and bioavailabe minerals. This salad is, in one word, just a miracle for maintaining “happy and healthy liver”.

Ingredients

1 bunch Arugula
1 bunch Dandelion or Radicchio
5 spears asparagus
½ avocado
½ cup broccoli sprouts
¼ cup pomegranate seeds (if available)
1 tomato, chopped
1 red bell pepper, sliced
½ cup walnuts
¼ cup seaweed (wakame, arame or hijiki)

Flaxseed oil and lemon dressing

Makes about 1 cup. Add 1 or 2 Tbs of this dressing to a serving of steamed brown or wild rice, salad, or vegetables.

½ bunch fresh basil, or 2 heaping teaspoons, dried
2 cloves garlic
½ cup lemon juice
¼ cup extra virgin olive oil
¼ cup flaxseed oil dash tamari or liquid amino acids
½ teaspoon Stevia extract
¼ cup water, filter
2 tsp lemon zest

Procedure (dressing)

Wash and dry basil, and peel garlic. Chop basil and garlic and combine them in the blender. Add the remaining ingredients and blend them to a creamy consistency.

PER SERVING: (1 tablespoon)
